This morning the sun was shining and I didn't fancy cereal or toast and saw the dough so I decided to make a breakfast pizza. After looking around I decided I fancied a sweet pizza, despite how tasty all the sausage and egg pizzas looked. This was the final product:
A fruity breakfast pizza with natural yoghurt, stewed rhubarb and some mixed berries on top.
Recipe:
1 portion pizza dough, ready for baking
1tbsp melted butter
1 tsp cinnamon
Fresh rhubarb
lemon juice
sugar
splash of water/orange juice
Natural yoghurt
Fresh berries
Start off by rolling out the pizza dough and arranging it on a baking tray, then spread the melted butter over it and sprinkle the cinnamon on. Bake in a preheated oven at 200 degrees for 10-15 minutes until lightly golden then leave to cool.
Meanwhile prepare the stewed rhubarb for the sauce. Begin by roughly chopping the rhubarb then place it in a pan, add a generous amount of sugar (more can be added later if not sweet enough), a dash of lemon juice and a couple of tbsp of cold water. Cook over a low heat stirring occasionally until mushy.
Whilst the rhubarb is cooking chop your fresh fruit roughly into a variety of shapes and sizes, this will make it look more interesting.
When the rhubarb is mushy check the sweetness and add sugar or more lemon if required to taste. Then let it cool for a few minutes.
To create the pizza start by spreading 2 tbsp of natural yoghurt over the base, then 2tbsp of rhubarb. Finish by sprinkling the fruit all over then top and then serve with coffee for a sunny day breakfast.
